ilani announces major changes to dining scene

ilani Casino and Resort clarified the conversion of two major restaurants to self-managed concepts while also announcing a major change to Michael Jordan’s Steak House. 

The new chapter in dining at ilani is set to begin this spring as the Cowlitz Indian Tribe moves toward independent restaurant management. The changes include a management swap at “Line and Lure” and the phasing out of the long-standing partnership with Michael Jordan’s Steakhouse to introduce a self-managed concept. 

“ilani is preparing to launch a first for the Cowlitz Indian Tribe: a proprietary steakhouse concept — Sovereign — opening this spring,” a statement from ilani stated. “This new development means that Michael Jordan’s Steak House will be closing after its April 19 service. The Steak House has been instrumental to ilani’s establishment and success as a destination property, and as the Cowlitz Indian Tribe evolves and embraces increased self-management, the focus will remain on introducing innovative and dynamic new experiences to delight guests.” 

The announcement of the changes to the restaurant scene at ilani came after the deadline for the Wednesday, April 15, edition of The Reflector, so advanced notice was not possible. 

“Sovereign” is expected to open in early May in the former steakhouse space. At the same time, Line & Lure management swapped hands to ilani and was closed from April 20-22 for preparation, a statement by ilani said.

After the April 16 press release announcing the April 19 closure of Michael Jordan’s Steak House, it remained unclear whether the changes to the restaurants came suddenly or were part of expiring lease agreements. Kara Fox-LaRose, a spokesperson for ilani, stated in an email on Friday, April 17, that ilani was currently “finalizing the details of the management transition to ensure teams are set up for success.”

“In terms of Line & Lure, as it also moves to self-management, ilani is committed to offering fan-favorites at the restaurant,” stated Fox-LaRose on Thursday, April 16, updating the following day that Line & Lure will receive a new name, unknown at press time. “The hours of operation, menu will remain the same, as well as the weekend brunch and live entertainment.”

The forthcoming Sovereign steakhouse is described as a modern dining destination centered on high-end American beef offerings, including USDA Choice and Prime cuts, as well as regional Wagyu selections, an April 16 press release by ilani stated. The concept blends coastal influences with a contemporary, casual atmosphere, aiming to provide both celebratory and elevated everyday dining experiences, ilani adds. 

The closure of Michael Jordan’s Steak House marks the end of a nearly decade-long partnership between ilani and the Cornerstone Restaurant Group. The restaurant has been a fixture at the venue since its opening in 2017 and played a key role in establishing ilani’s early reputation as a regional dining and entertainment destination, the release added. 

Kara Fox-LaRose, president and general manager of ilani, said in the release that the partnership brought “a level of culinary prestige and national visibility that complemented the Tribe’s broader vision for economic development and hospitality leadership.”

“We are grateful for our shared purpose and consider the legendary steak house an inspiration as we continue our quest to grow and to delight our guests on every visit,” Fox-LaRose said in the release. 

Cornerstone Restaurant Group CEO Josh Zadikoff echoed that sentiment in the press release, noting that collaboration helped set a “standard of excellence” at ilani and thanked both staff and guests for their role in the restaurant’s success. 

The introduction of Sovereign reflects a broader shift by the Cowlitz Indian Tribe toward self-management and continued investment in curated guest experiences. The restaurant is intended to carry cultural significance alongside its culinary focus. 

“Sovereign is more than a name — it is a reflection of identity, stewardship and vision,” said Fox-LaRose, in the release. “For the Cowlitz Indian Tribe, Sovereign speaks to self-determination and an enduring relationship with the land, water and traditional foodways. It represents a commitment to honoring the past while shaping a vibrant future, bringing forward a dining experience that is both elevated and deeply rooted in cultural connection, sustainability and respect.”

Cowlitz Indian Tribe Chairman Bill Iyall added that the project represents an opportunity to highlight tribal heritage while creating new economic opportunities.

“The concept behind Sovereign reflects our commitment to honoring Cowlitz Indian Tribal heritage, investing in our future, and creating opportunities that strengthen our community,” Iyall said in the release. “It also gives us a wonderful chance to welcome guests and share our story in a way that is uniquely Cowlitz.”
