Heritage Farm hosting canning, food preservation classes

Residents can learn how to can and preserve foods during a free educational series offered by Sandy Brown, Washington State University Extension food safety emeritus, at the 78th Street Heritage Farm, 1919 NE 78th St., Vancouver.

The classes will be hosted on the following dates, with the listed topics:

Canning basics: 2 p.m. to 4 p.m., Wednesday, June 19. Learn the basics of food preservation and the equipment needed to safely do so.

All About Berries: 2 p.m. to 4 p.m. and 6:40 p.m. to 8:30 p.m., Wednesday, June 26. Learn how to process fresh berries into jams and jellies or by drying and powdering for preservation.



Pickles and Relishes: 2 p.m. to 4 p.m. and 6:40 p.m. to 8:30 p.m., Wednesday, July 24. Learn how to make pickles or pickled products through various pickling methods.

Canning tomatoes, Salsas and Sauces: 2 p.m. to 4 p.m. and 6:40 p.m. to 8:30 p.m., Wednesday, Aug. 14. People will learn how to can tomatoes or combine them with other ingredients to make shelf-stable salsas and sauces.

Pressure Canning Pointers: 2 p.m. to 4 p.m. and 6:40 p.m. to 8:30 p.m., Wednesday, Aug. 28. Residents will learn about pressure canning, which is used to preserve specific vegetables, meat, fish or poultry.
